The best thing to do is to read any manuals you can find. The machines made by Hitachi will all basically work the same. The important thing to know is what size loaf your machine makes. Just look at other machines at the place you can buy them to get an idea of loaf size. Then find a recipe for the size you have in another manual. Run your basic cycle and note the times that different things happen.

The problem isn't the seal, it is the bearing. You need to disassemble it, clean it, and lubricate it. Turn the pan upside down, and there's a C-ring that you need to pry off. Then you can tap the shaft through the bearing, and it will fall out. Clean the shaft and inside of the bearing, lubricate it, and reassemble. I usually lubricate with vegetable oil, to avoid any chance of noxious contamination getting into the bread, but I've read a recommendation to use liquid graphite lock lubricant, available from NAPA Auto Parts, to prevent the bearing from sticking again as soon: BTW, be careful of that rubber seal -- they are apparently irreplaceable! October 23, 2015 0 found this helpful Here's two ideas -- find someone who reads Japanese to translate the recipes for you. (Might be a tough thing to do!!) Or, measure the size of the loaf of bread that it makes or the capacity of the loaf tin, and compare that to some other machine, for which you have recipes. Try to find a machine that makes small loaves, since that seems to be the difference with this machine. Or -- here's what I'd likely do -- eyeball the size, and then just cut a regular bread machine recipe in half or reduce to 2/3, and see if that works.
